Simple Sauteed Zucchini

Looking for a way to use up some extra zucchini? This saute is simple and delicious. Bonus: it’s easily made dairy-free. In 15 minutes or less, you could have this side dish ready and on the table.

Though I went the mandoline slicer route, you could slice the vegetables by hand as well – so don’t be put off by this recipe if you don’t own or want to use a slicer. 

Sauteed Zucchini

My first introduction to the world of sauteed zucchini was by my mother-in-law at a time when I was sure that I did not like this particular vegetable. Rarely have I been more happy to be wrong. I was transformed from a hater to someone who craves zucchini!

Simple Sauteed Zucchini

A buttery, slightly garlicky side dish that is great for using up extra zucchini.

Ingredients

  • 2 tbsp butter
  • 1 zucchini large
  • 1 red onion medium
  • salt, pepper to taste
  • garlic powder to taste

Instructions

  • Thinly slice the zucchini and onion. I used a mandoline slicer for the thinnest slices - it cooks faster when it's really thin.
  • In a medium sized skillet, melt about two tbsp of butter. Add the zucchini and onion, and cook over medium heat. Add garlic powder, salt, and pepper to taste - ebb on the side of less. You can add more when serving.
  • Cook while stirring regularly, until the zucchini looks limp and the onion is translucent.

Notes

I used red onion for the maximum flavor, but you could also use yellow or white onion if you prefer.
Feel free to sub coconut oil for the butter to make this recipe dairy free.
