Healthy Praline Coffee Blondies

These THM S, low carb, refined sugar free praline coffee blondies have a lightly roasted flavor, with a slight chocolate creaminess and crunch from the pecans. Even people who eat regular sugary treats have been known to enjoy these bars!

Although these bars took longer to bake than expected, they were worth the wait – probably some of the best “blondies” I have had, healthy or otherwise. 

With approximately 7g protein per bar, it’s a great snack or addition to some collagen coffee… because what’s “too much coffee”, right?! 

Praline Coffee Blondies Ingredients

With one exception, the ingredients for these praline coffee blondies can all be purchased at your typical supermarket. Notably, you could purchase unflavored protein powder at your local supermarket (in most cases), but it might not be on plan. 

My protein powder purchases have changed throughout my time on the Trim Healthy Mama plan, but my two favorite unflavored protein powders include Jarrow Formulas brand (not always available which is why I switched) or Nutricost. 

Also, please keep in mind that only the unflavored whey from Nutricost is on plan, due to sucralose in the flavored varieties. 

Simply Delicious

Enough said about the ingredients, how about the flavor? My favorite sugar-fiend described them to me as “simply delicious” – because despite their humble looks, these bars are quite tasty. 

With a slightly denser texture, they really satiate the craving to “bite into something” without being overwhelmingly sweet. The small bits of chocolate melted throughout really shine in these bars, and bring the roasted notes forward quite pleasantly. 

I do advise warming these bars slightly before enjoying, or eating them at room temperature – not cold – for the most enjoyment. However, please store these bars in the refrigerator (if not all consumed immediately) as there are no preservatives in them and they can spoil more quickly than “traditional” baked goods. 

Looking for a bar dessert but not really a blondie fan? Try these Key Lime bars! With absolutely nothing in common except for their bar form and being a healthy THM S, both are quite delicious.

Ingredients

  • 1/2 c protein powder unflavored
  • 1/2 c coconut flour
  • 1/4 c almond flour
  • 1/2 c Truvia spoonable jar variety
  • 1 1/2 tsp baking powder aluminum free
  • 1/4 c butter softened
  • 1/4 c coconut oil melted
  • 1/2 c brewed coffee cooled
  • 1/2 c almond milk original unsweetened
  • 1 egg large
  • 1 tsp blackstrap molasses
  • 1 tsp vanilla extract
  • 3/4 c pecans chopped
  • 1/4 c sugar free milk chocolate chips (I used Bake Believe)

Instructions

  • Preheat oven to 350°F.
  • Prepare a glass 8x8 pan by lining it with parchment paper. Set aside.
  • In a medium sized bowl, stir together the dry ingredients (except the pecans and chocolate chips).
  • Stir in the softened butter, until only small chunks remain.
  • Add remaining ingredients (except pecans and chocolate chips) and mix well.
  • When the mixture takes on a batter-like consistency, fold in the pecans and chocolate chips.
  • Pour mixture into the parchment lined 8x8 pan and bake for about 35-40 minutes, turning halfway through.
  • The blondies are done when the center is no longer jiggly and the top is a nice golden brown.
  • Enjoy!

Notes

You could probably use a metal 8x8 pan, but might need to reduce the baking time. 
Serve warm or room temperature, but not cold for best results; but store in the refrigerator if not all enjoyed immediately.
