Creamy Key Lime Bars

To say things have been hectic would be a bit of an understatement. My sister came to stay with my husband and me for a few days, we have been traveling back and forth to visit family every weekend for the past three weekends, and my uncle passed away.

In the midst of all of the chaos and sadness, I have been struggling more than usual to stick with my new lifestyle – A.K.A. Trim Healthy Mama (THM). You can read more about it on their website here, but in the simplest form it’s a low glycemic lifestyle.

The severe shortage of recipes on here is due in part to this change – it’s difficult to adjust to a new way of eating, not to mention recipe creation on top of that! Prior to converting, I had only heard about alternative flours and special ingredients. In the time no new recipes were forthcoming, I was learning to use them. Now they are an everyday part of my life – and I wouldn’t change a thing.

Only having been on plan since January 2018, I’ve already lost 22lb.

But that’s enough rambling. On to these bars! I created this recipe one day when I was craving key lime flavor, but couldn’t find a recipe that suited me which also complied with the THM lifestyle.

Creamy Key Lime Bars

They are very quick and easy to throw together, and there is no baking required.

Creamy Key Lime Bars

No bake, creamy bars that taste like key lime pie.

Ingredients

Crust Ingredients:

  • 2 tbsp Pyure
  • 2 tbsp molasses
  • 1/2 c coconut flour
  • 1 c almond flour
  • 2 tsp vanilla
  • dash mineral salt
  • 1/4 c coconut oil

Filling Ingredients:

  • 16 oz cream cheese softened
  • 1/2 c + 1 tbsp key lime juice
  • 1/4 c Pyure
  • 1/4 c + 2 tbsp unflavored protein powder

Instructions

For Crust:

  • In a small bowl, combine all crust ingredients until they start to clump. Press into a 8×8 pan. Refrigerate while making filling.

For Filling:

  • By hand or with an electric mixer, beat filling ingredients together until smooth. Pour over crust. Chill.
