Cranberry Orange Muffin in a Mug

Ingredients

  • 1 egg
  • 4 tbsp Trim Healthy Mama baking blend
  • 1 tbsp coconut oil
  • 2 tbsp water
  • a small handful of fresh or frozen cranberries
  • 2 tsp dried orange peel
  • 1/2 tsp baking powder
  • 4 1/2 tsp Trim Healthy Mama gentle sweet

Instructions

  • Combine all ingredients in a mug and microwave for 1 min 45 seconds, less if you have a very powerful microwave (mine is 700 watts). To test for done-ness, touch the top of the muffin gently. If your finger comes away clean, it’s done. If not, microwave in 15 second increments until done.
