Definitely a denser bread, this blueberry banana oat bread has a more normal texture than most Trim Healthy Mama baked goods. It’s more of a sweet bread, and each bite has a pop of delicious blueberry.

Blueberry Banana Oat Bread Special Ingredients
There’s only one ingredient in this bread that you probably cannot find at your local supermarket, and that’s Trim Healthy Mama baking blend (something most THM’s have on hand). You always have the option to mix up your own, though, something I usually do, as well.
Pre-dried orange zest (spice aisle) might be harder to locate, but you can always zest a fresh orange for a brighter pop of flavor, and eat the fruit. Or just leave it out entirely.

The oats in this recipe are divided to provide better texture for the blueberry banana oat bread. The first set of oats are finely ground (a blender or Ninja food chopper work great) and the second set remain whole.
Please note that grinding the oats is an important step, not to be skipped for best results. If using the Ninja chopper, I used the smaller set.
Blueberry Banana Oat Bread
Equipment
- blender or Ninja chopper
Ingredients
- 3 large bananas very ripe, mashed
- 1 c Trim Healthy Mama baking blend
- 1 c old fashioned oats finely ground
- 1 c old fashioned oats whole
- 1/3 c egg whites carton variety
- 2 tsp vanilla extract
- 1/4 c Truvia spoonable jar variety
- 2 tsp cinnamon ground
- 1/2 tsp salt
- 1 tsp orange zest fresh or dried
- 2 1/2 tsp baking powder aluminum free
- 1 c blueberries frozen
Instructions
- Preheat oven to 325°F.
- Line the bottom of a loaf pan with parchment, and lightly grease. Set aside.
- In a medium bowl, mash the bananas.
- Grind 1 c of the oats, and the ground AND whole oats, and THM baking blend to the mashed bananas. Stir well.
- Stir in the egg whites and vanilla extract to the banana mixture and combine.
- Add remaining ingredients (except blueberries) to the banana oat mixture and stir again.
- Fold in the blueberries.
- Pour the mixture into the parchment lined loaf pan, and place in the preheated oven for 60 minutes or until a toothpick comes out clean.
- Enjoy!!
