Blueberry Banana Oat Bread

A dense THM E, this sweet bread has pops of blueberry flavor in each bite.

Equipment

Ingredients

  • 3 large bananas very ripe, mashed
  • 1 c Trim Healthy Mama baking blend
  • 1 c old fashioned oats finely ground
  • 1 c old fashioned oats whole
  • 1/3 c egg whites carton variety
  • 2 tsp vanilla extract
  • 1/4 c Truvia spoonable jar variety
  • 2 tsp cinnamon ground
  • 1/2 tsp salt
  • 1 tsp orange zest fresh or dried
  • 2 1/2 tsp baking powder aluminum free
  • 1 c blueberries frozen

Instructions

  • Preheat oven to 325°F.
  • Line the bottom of a loaf pan with parchment, and lightly grease. Set aside.
  • In a medium bowl, mash the bananas.
  • Grind 1 c of the oats, and the ground AND whole oats, and THM baking blend to the mashed bananas. Stir well.
  • Stir in the egg whites and vanilla extract to the banana mixture and combine.
  • Add remaining ingredients (except blueberries) to the banana oat mixture and stir again.
  • Fold in the blueberries.
  • Pour the mixture into the parchment lined loaf pan, and place in the preheated oven for 60 minutes or until a toothpick comes out clean.
  • Enjoy!!

Notes

The oats are divided because half are finely ground, which is important for the more "normal" texture of this bread. Please don't skip this step for best results.
