Ingredients
3 large bananas very ripe, mashed
1 cTrim Healthy Mama baking blend
1c old fashioned oatsfinely ground
1c old fashioned oatswhole
1/3cegg whitescarton variety
2tsp vanilla extract
1/4cTruviaspoonable jar variety
2tsp cinnamonground
1/2tsp salt
1tsporange zestfresh or dried
2 1/2tspbaking powderaluminum free
1c blueberriesfrozen
Instructions
Preheat oven to 325°F.
Line the bottom of a loaf pan with parchment, and lightly grease. Set aside.
In a medium bowl, mash the bananas.
Grind 1 c of the oats, and the ground AND whole oats, and THM baking blend to the mashed bananas. Stir well.
Stir in the egg whites and vanilla extract to the banana mixture and combine.
Add remaining ingredients (except blueberries) to the banana oat mixture and stir again.
Fold in the blueberries.
Pour the mixture into the parchment lined loaf pan, and place in the preheated oven for 60 minutes or until a toothpick comes out clean.

Notes
The oats are divided because half are finely ground, which is important for the more "normal" texture of this bread. Please don't skip this step for best results.
