Dark Chocolate Sourdough Pancakes

Ready for some delicious dark chocolate sourdough pancakes? 

As a THM E, they are absolutely decadent with low carb, low fat whipped “cream” … but if you are in a season of crossovers, you could enjoy these pancakes with a more traditional whipped cream, too!

Using Sourdough Starter:

I love making pancakes with my sourdough starter, because it is a really easy way to use up starter when it is getting out of control (size wise). 

Pancakes are also a great introduction to sourdough starter, for those who are just getting started. With much fewer steps than a loaf of bread, sourdough pancakes are almost a mix-and-go recipe (just add in some fermenting time). 

Although these dark chocolate sourdough pancakes have a few more steps than traditional sourdough pancakes (due to the cookie crumbles and optional whipped “cream”), they are well worth the effort when you are ready to switch up your pancake game a bit.

Equipment:

Technically, no special equipment is needed (other than a sourdough starter, but that isn’t really equipment …) to make these pancakes … but an electric griddle is nice to have. If you don’t already have an electric griddle, you could just as easily make these pancakes in a greased or nonstick skillet or on a traditional griddle. 

Dark Chocolate Sourdough Pancakes Fuel Type:

These pancakes are a Trim Healthy Mama E fuel. Being right at carb limits (with a yield of roughly 8 large pancakes) be careful adding any other carb source. A generous helping of cookie crumbles was included in the calculations. 

Keep in mind, however, that the recipe might yield more than 8 pancakes. (I forgot to count the exact number before than pancakes were devoured.) That was a safe guess. You could have two or three smaller pancakes (less than the 1/2 c of batter per pancake that I used). 

Dark Chocolate Versus Milk Chocolate:

If you are not a dark chocolate fan, then these probably are not the pancakes for you. Although you could try adding more sweetener to both the pancakes and the cookie crumbles, I have not tried this method. Everyone’s taste buds are different, so if the pancakes don’t turn out sweet enough for your liking, have a dark chocolate fan on hand to enjoy these pancakes, just in case.

Dark Chocolate Sourdough Pancakes

Ingredients

Dark Chocolate Pancakes

  • 2 c water
  • 1 c sourdough starter
  • 2 c white whole wheat flour
  • 1 tbsp honey
  • 1/2 c egg white
  • 1 tbsp Pyure
  • 1/2 tsp salt
  • 1/4 c cocoa powder unsweetened
  • 1 tsp baking soda

Chocolate Cookie Crumble

  • 4 tbsp almond milk original, unsweetened
  • 4 tbsp water
  • 4 tbsp coconut flour
  • 4 tbsp cocoa unsweetened
  • 1 tsp baking powder
  • 2 tsp Pyure

Instructions

For the Pancakes:

  • In a large bowl, combine the flour, water, and sourdough starter.
  • Cover loosely, and let sit at room temperature for at least seven hours, or overnight.
  • Preheat electric griddle to 325 (you can also use a regular griddle, but you'd have to estimate the temperature).
  • Add remaining pancake ingredients.
  • Note that the baking soda should react with the batter and cause rising/expanding and bubbling.
  • Drop about 1/2 c batter onto the griddle, and cook until bubbles form and the sides are slightly dry. Flip and cook remaining side.
  • Remove from griddle.

For the Cookie Crumble:

  • Combine all "cookie" ingredients, and microwave one minute.
  • Break apart into crumbles.

Putting it All Together:

  • You can have one large pancake to stay within carb limits - or two smaller pancakes.
  • Top your dark chocolate pancake with cookie crumbles and sugar free syrup, or fill with FP whipped "cream" and sprinkle generously with cookie crumbles.
  • Enjoy!

Notes

Here is the recipe if you wish to top your pancake with FP low carb, low fat whipped "cream" along with the cookie crumbles.
This is NOT a milk chocolate recipe, but you could try making it sweeter if you desire more of a milk chocolate flavor. I would advise adding sweetener to both the cookie crumble and the pancakes.
