FP Whipped "Cream"
A delicious dairy-free, sugar-free, low carb, low fat alternative to whipped cream.

- 2 tbsp water
- 1 tsp gelatin unflavored
- 2 scoops collagen (I used Z!nt)
- 1 tsp vanilla extract
- 1 c water cold
- 1 1/2 tsp Pyure
- 1/4 c egg white pasteurized
- 1/4 tsp xanthan gum
In the bowl of a stand mixer, add the water and gelatin. Whisk well, making sure gelatin dissolves.
(The gelatin I use does not need hot water to dissolve, but you could start with hot water if yours does).
Add the collagen and cold water to the bowl, whisking continuously.
Add remaining ingredients, whisking on medium to medium high, until stiff peaks form. (I didn't time it, but this step probably takes at least five minutes. Be patient!)
Serve immediately, or chill and whisk again before serving.
