FP Whipped "Cream"

A delicious dairy-free, sugar-free, low carb, low fat alternative to whipped cream.

Equipment

  • Stand mixer with whisk attachment

Ingredients

  • 2 tbsp water
  • 1 tsp gelatin unflavored
  • 2 scoops collagen (I used Z!nt)
  • 1 tsp vanilla extract
  • 1 c water cold
  • 1 1/2 tsp Pyure
  • 1/4 c egg white pasteurized
  • 1/4 tsp xanthan gum

Instructions

  • In the bowl of a stand mixer, add the water and gelatin. Whisk well, making sure gelatin dissolves.
  • (The gelatin I use does not need hot water to dissolve, but you could start with hot water if yours does).
  • Add the collagen and cold water to the bowl, whisking continuously.
  • Add remaining ingredients, whisking on medium to medium high, until stiff peaks form. (I didn't time it, but this step probably takes at least five minutes. Be patient!)
  • Serve immediately, or chill and whisk again before serving.
  • Enjoy!
