Orange Vanilla Granola

Equipment

  • Heavy duty aluminum foil

Ingredients

  • 3 c old fashioned oats
  • 3/4 c whey protein powder unflavored
  • 1 tsp salt
  • 1/4 c Truvia sweetener
  • 1/3 c almonds whole
  • 1 tbsp orange peel dried
  • 1/4 c egg whites carton
  • 1/4 c almond milk original, unsweetened
  • 2 tsp vanilla extract
  • 1 tsp orange extract
  • 1/3 c white chocolate chips sugar free

Instructions

  • Preheat oven to 300°F and line a large cookie sheet with heavy duty aluminum foil.
  • In a medium sized mixing bowl, combine the oats, whey protein powder, salt, Truvia sweetener, orange peel, and almonds. Stir well.
  • Add the egg whites, almond milk, and both extracts, and stir until well combined.
  • Pour the granola onto the foil lined cookie sheet and bake in preheated oven for about 45 minutes, stirring halfway through* (see note).
  • Once the granola (and the cookie sheet) have cooled to room temperature, stir in the white chocolate chips.
  • Enjoy!

Notes

* Heavy duty foil is a MUST if you ever want to get your granola detached from it. The cheap foil tears and you get pieces in the granola (ask me how I know). I have considered trying non-stick parchment paper, but haven't yet, so if you do please let me know!
Typically I "stir" the granola by detaching it from the aluminum foil and dumping onto the cookie sheet beneath, then baking it the remaining time. 
* I used Bake Believe white chocolate chips, which have no sugar added. 
* You can also zest a fresh orange and use that instead of the dried orange zest. I've done it both ways.
