White Christmas Dreaming Granola

A low fat, THM E granola that's full of protein and also contains caffeine.

Ingredients

  • 3 c old fashioned oats
  • 3/4 c whey protein powder unflavored
  • 1 tsp salt
  • 1/4 c Truvia sweetener
  • 2 tbsp finely ground hazelnut coffee grounds NOT BREWED
  • 1/3 c plain, raw hazelnuts shelled
  • 1/3 c shredded coconut unsweetened
  • 1/4 c egg whites I used carton
  • 1/4 c almond milk original, unsweetened
  • 2 tsp caramel extract
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 300° F.
  • Line a cookie sheet with foil and set aside.
  • In a medium bowl, combine all dry ingredients, including the coffee grounds, and give a quick stir just so everything mixes up nicely.
  • Add the egg whites and almond milk and mix until just combined.
  • Stir in the extracts and mix well.
  • Dump the oat mixture onto the foil lined cookie sheet, and bake for 45 minutes or until the oats start to brown and the hazelnuts are roasted¼.

Notes

IF you are not grinding your own whole bean hazelnut coffee (if you bought pre-ground coffee from the store) you will probably need to grind your coffee even finer - think like espresso or instant coffee (only better) so that you get the flavor without grit. I used a scant 1/4 c beans and ground them to a fine grind, with about a tbsp left over. 
If you cannot find whole bean coffee, or cannot grind your own, you could try using hazelnut instant coffee in place of the whole bean hazelnut coffee. 
You could also bake this granola at 350 F for 20 min or so, but keep in mind it will result in a chewier, less crunchy granola.
